Overview

To operate the Stewarding area and ensure that dishes are done, line is stocked, and associates remain productive. High levels of cleanliness and organization are maintained. To also operate the Associate Dining Room in an efficient way, according to requirements.

Responsibilities

  • Lead and manage the Resort Stewarding team in all aspects of the department and ensure standards are followed.
  • Schedule, train, orient and develop associates 
  • Supervise the duties of all stewarding department employees, facilities, operation and costs.
  • Supervise the sanitation, cleanliness, hygiene as well as the quality level of product and services at the resort.
  • Ensuring the highest level of cleanliness and organization with local health department 
  • Ensure Back of House areas are maintained to the highest cleanliness standards and cleaning schedules are followed and completed.
  • Directing Night Cleaning company, as needed to have areas at a high level of cleanliness
  • Check more specifically the proper use of chemicals and washing
  • Direct and assist Stewards to make clean up more efficient 
  • Ensure water temperature, and chemical levels are appropriate for cleaning and documented.
  • Being on the floor during meal periods, as needed
  • Coordinate with the Banquet and Outlets Manager to establish minimum and maximum operating par stocks and supplies and requisite more if necessary on approval by the Director of Food & beverage.
  • Co-ordinate with the Banquet and Food & Beverage Managers to check their requirements for the day and the next day.
  • Work with the Banquets Department, when needed
  • Assist in the stock take of equipment and other items as required for inventory tracking
  • Work closely with the Chef, Banquets & Food & Beverage Manager to anticipate guest needs
  • Work with all departments to ensure items that are required for service are available when needed.
  • Take all necessary actions to reduce the loss of silverware /flatware
  • Take all necessary actions to reduce breakage of China and Glassware’s.
  • Supervises employee’s ability to follow loss prevention policies to prevent accidents and control costs.
  • Enforces proper cleaning routines for service ware, equipment, floors, etc
  • Enforces proper use and cleaning of all dish room machinery
  • Ensures all food holding and transport equipment is clean and in working order
  • Ensures compliance with food handling and sanitation standards
  • Ensuring Stewarding staffs have supplies, equipment, tools, and uniforms necessary to do their jobs.
  • Prepare quarterly reports on shortages in china, silverware and glassware and requisition replacements as required while following budget guidelines.
  • Do an operational small ware inventory regular basis.
  • Ensures disciplinary procedures and documentation are completed according to Standard Operating Procedures.
  • Achieves and exceeds goals including performance goals, budget goals, team goals, etc.
  • Do periodic reviews on a consistent basis all positive and negative incidents
  • Celebrates successes by publicly recognizing the contributions of team members
  • Maintain harmony between kitchen/ stewarding and service associates
  • Encourages and builds mutual trust, respect, and cooperation among team members
  • Follow open door policy
  • Serves as a role model for the stewarding teams to demonstrate appropriate behaviour
  • Assist Chefs and kitchen staff with various tasks as needed
  • To look out for the safety of yourself, co-workers and to follow all Health and Safety requirements in the workplace.
  • All other duties as assigned

Qualifications

  • High School Diploma or Equivalent
  • Good knowledge of Stewarding/cafeteria tasks
  • Training in management and employee development preferred
  • Continuous training and education to keep abreast of changes in the industry and external environment.
  • Excellent written and oral communication skills.
  • Ability to work independently.
  • Ability to work well under pressure in a fast-paced environment.
  • Extensive food & beverage knowledge and ability to develop and apply practices, procedures, and principles
  • Developed writing skills sufficient to prepare written materials involving detailed descriptions and explanations requiring the accurate use of specialized terminology.
  • Self-planning skills sufficient to schedule, organize, and carry out work assignments according to established work plans, adjusting work schedules according to changing priorities.
  • Developed judgment and problem solving skills sufficient to interpret and/or analyze factual and conceptual information with the ability to adapt general procedures or approaches when formulating responses to problems.
  • Manages workload independently, and works well in teams.
  • Experience and proven success working with senior management and in a corporate environment.
  • Develops security and systems knowledge through on the job experience.
  • Must display leadership skills, the ability to multi-task and adjust to multiple jurisdictions.
  • Working knowledge of MS Word, MS Excel, MS PowerPoint.

The Schedule for this position may vary and would require the ability to work shift work, late nights, weekends and holidays.
